2 post rack

Good thing President Obama fled overseas after the disastrous Democratic outcomes in the midterm election.

He wouldn't want to see Tuesday's new poll numbers.

Gallup just announced that Americans' favorable opinions of George W. Bush have risen. This comes as the Obama presidency ages, and now their favorable views of the Republican nearly match their feelings about the Democrat.

Gallup now finds that 44% of Americans have a favorable view of the 43rd president, up about 10%, or four points since the end of his second term in January 2009. Obviously, the former chief executive no longer has a job approval rating.

According to the authoritative RealClearPolitics average of polls, 45.4% of Americans now approve of Obama's job performance, while 49.6% disapprove, compared with 53% Bush disapproval. Obama's approval is down from the 70% range at his inauguration.

Additionally, the same RCP compilation finds 63.8% of Americans feel the country is on the wrong track under the current president, while 31.2% feel it's on the right track.

During his 22 months in office, Obama and his VP, Joe Biden, have sought to blame much of the country's lingering problems, including jobs, on eight years of failed you-know-whats by you-know-who from Texas.

The controversial Bush is emerging from the same period of relative seclusion to promote his new book, "Decision Points," which has surprisingly become an instant best-seller with long lines forming to buy the book on Tuesday's publication day (See photo above).

In recent interviews, Bush says the presidency is difficult enough and he has no intention of criticizing his successor.

Ticket readers had an advance look here at Bush's conversation Tuesday night with the Fox News Channel's Sean Hannity (6 PST, 9 EST). The former Texas governor says he enjoys his post-White House life and is at peace with the many controversial decisions he made and describes in the memoir.

Though improved in recent months, Bush's current approval is barely half of his highest approval, which was 87% in late 2001, just one point below the highest Gallup has ever found among public figures. (Tiger Woods' and Colin Powell's 88%.)

That approval carried over to 2002 when Bush joined Franklin Roosevelt as the only two presidents whose parties gained seats in their first midterm elections. A week ago Obama and his Democrats lost a half-dozen Senate seats and five dozen House seats, the most in a half-century.

When Gallup first began polling on Bush in early 1999, his favorable rating stood at 69%. After the contentious Florida vote recount of late 2000, it was at 67%.

At this point in Bill Clinton's post-presidential period, his rating was slightly higher than Bush's, 47%.

Epic is the only word to describe this coupon genius who bought $1658.53 of stuff from Walgreens for only $19.99. It took 6 hours to check out the over 100 transactions necessary to complete the purchase. Why did the manager gladly let him do this?

Because the guy, who calls himself "The Coupon Prof," is going to donate all the items to a local charity.

Ok, enough with gooshy, how did he pull it off? The scheme hinges on something called "Register Rewards" which dispense from the Catalina device at the Walgreens register. They give you money off just about anything in the store, except for the item that generated the coupon. Each week there are different items at Walgreens that will give out Register Rewards, you just have to check the local circular.

By combining a manufacturer's for $1 Crest toothpaste that generated a $10 off Register Rewards that was then used to buy another item that generated Register Rewards, and then that was used to buy another item that gave out Register Rewards, and so on, cycling through 10 different products in a daisy-chain of savings, he was able to rack up the impressive shopping spree for little cost.

(One caveat with Register Rewards is that they only work on one transaction. So if the deal is a box of cereal that's normally $4 for $1, and you buy 5, only 1 of them will be discounted. So to max your savings, you would need to use five separate coupons in 5 transactions).

Here's the breakdown:

Transaction A

Crest Toothpaste $2.99

Oral B Toothbrush $2.25

Scunci Hairbands $1.99

Colgate Toothpaste $2.99

Campbells Soup $0.59

Candy Cane Pen $0.20

Total: $11.01

- $1 Crest Coupon

-$10 Register Rewards from Trans. B

= $0.01 out-of-pocket cost

Transaction B

Robitussin to Go $2.49

Old Spice Body Spray $3.99

Secret Body Spray $3.49

Canned Oranges $0.39

Total $10.36

- $10.25 RR (Trans. A)

= $0.11 out-of-pocket cost

And this is his final tally of plunder

55 Old Spice Body Sprays for a total of $3.99. That's $3.99 for 55.

75 Oral B Toothbrushes ($2.25)

88 Crest Toothpastes ($2.99)

17 Olay Body Washes ($3.49)

24 Degree Deodorant ($0.99)

51 Colgate Toothpastes ($2.99)

55 Secret Body Sprays ($3.49)

22 Nivea Shaving Creams ($2.99)

87 Campbells Soups ($0.59)

41 Scotch Bubble Mailers ($0.39)

4 ThermaCare Heat Wraps ($2.49)

15 Advil ($0.99)

24 Canned Oranges ($0.39)

53 Hair Bands ($1.99)

76 Robitussin ($2.49)

46 Candy Cane Pens ($0.20)

"Best day so far in the life of the Coupon Ninja," he writes. Yes, the key word there is "so far..." - can't wait to see what he gets up to next!

Virtual Desktop Infrastructure

A few weeks ago, I posted the first in a series of blogs about Microsoft’s position on Desktop Virtualization. In that post, I explained the three layers to Desktop Virtualization consisting of User State, Application and Operating System Virtualization. Today, I’d like to spend a little more time discussing User State Virtualization and how to think about it now and in your future desktop strategy.

To recap, User State Virtualization (USV) separates the user’s data and settings from the physical device and replicates it centrally. Microsoft recommends that you start first with User State and Application Virtualization if you plan to incorporate virtualization into your desktop strategy. We make this recommendation because once these layers are configured they can be applied to users running traditional PCs or laptops, users running Remote Desktop Services (RDS) or users who are running their desktops via Virtual Desktop Infrastructure (VDI). Let’s take a closer look.

User State Virtualization enables user mobility and fast recovery of data in the event a device is lost. Because the data is stored centrally, delivered on demand when the user logs in, and synchronized based on policy configuration, users get their personalized Windows experience immediately regardless of which PC the login into. If they lose their primary device, IT delivers a machine with a more generic Windows 7 image, without needing to copy any data – enabling them to recover and be productive faster.

The concept sounds great but what does this really mean in the day to day life of a user and an IT administrator?

Let’s first take it from the user’s perspective – it’s about my data and my settings. In most cases, a standard user is typically assigned one PC. This user is “attached” to their PC in the same way they are attached to their phone. By this, I mean it holds some of their “identity” (desktop settings, files, applications, music, pictures) that makes their PC unique to them. For instance, take a look at my personalized Windows experience …

My desktop is personalized with the Windows 7 Aero Landscape theme.

Why? Because I love being outdoors. These images remind me of when I’m hiking, snowboarding or traveling to new places– when I’m not working! Another user might choose a different theme that is more reflective of their personality such as Windows Aero Architecture, maybe because they work in a design field. Both choices are personalized to the user that is logging into the desktop at any given time. If the PC is a shared device, each user wants to feel as if it is their device for the period of time they are using it.

For my taskbar, you can see that I use the Windows 7 default configuration which places it at the bottom of the screen. Some of my colleagues have moved their taskbar to the left side, possibly because their wide screen monitor has less vertical space or to they choose to move it to the top of screen. It looks strange to me but that’s the cool part of Windows, it adjusts to your personality and what you like, not necessarily what I prefer – so we’re all happy!

Lastly, I have many of my folders set up to be replicated to a remote server when I’m online and available locally for when I’m disconnected. This is because I want to make sure that if I have a device loss/failure or if I log in from a PC that is not my primary device, I can still get access to my most critical files whether I’m in Redmond, in Cambridge with the App-V team, or in other countries visiting customers. The net is, I get my personalized Windows experience whenever I login.

Now let’s look at it from IT’s perspective. I’m IT’s worst nightmare in some cases. I travel a lot which means I’m often disconnected from the network. I use Bitlocker on my laptop for security but corporate data still comes with me and like most users, if I wasn’t using User State Virtualization, I’d probably be pretty inconsistent with backing up local data. Lastly, if my PC is unavailable, it impacts my productivity. IT needs to get me a new machine, pull my hard drive or worst case - scrape the data from the hard drive, build a new machine and then give it back to me days later. So what’s an IT admin to do?

Enable User State Virtualization. Using Microsoft’s Folder Redirection, Roaming User Profiles and Offline folders, IT can deliver the user’s personalized Windows experience to any Windows Desktop they log into, physical or virtual.

  • Roaming Profiles reflect the users choices in personalization even if they have to use a different PC than they are used to. By replicating my Windows settings to a server I could recreate my Windows anywhere. The user logs into any PC and it shows their familiar setup, which increases user satisfaction even on shared devices.
  • Folder redirection replicates user data to a shared network location. This ensures that there is a copy and it is always available to me. It also simplifies the users upgrade to Windows 7 since IT no longer needs to migrate all the local data to the new device. When the user logs into any Windows 7 desktop with corporate access, their data is instantly available.
  • Offline folders let me keep everything local in the event I have to jump on a plane, work on a train, or take a taxi ride to the next customer visit. The user has flexibility while feeling confident that they have replicated their data to a shared location for safe keeping.

Now let’s loop back around to my earlier point about using User State and Application Virtualization together. We just discussed how to separate the first layer of Microsoft’s Desktop Virtualization Strategy and the business benefits it delivers. If you combine that with our Application Virtualization (App-V), you’ve now created a dynamic, personalized Windows experience that is customized by the user along with specific applications delivered to them on demand when they need them - all managed by IT through existing tools. Each layer managed is independently, yet works seamlessly together. The combination of these two technologies can help IT migrate users to Windows 7 faster and with less user impact.

So how do I get User State Virtualization (USV)?
Microsoft offers roaming profiles, folder redirection, and offline folders to enable user state virtualization. Our offering is licensed as part of Windows 7 Professional, Enterprise and Ultimate so there is no additional cost. To understand more about the components required to enable User State Virtualization and the improvements that have been made in Windows 7, see the Springboard For IT Pros Blog where A.J. Smith, Windows Product Manager for User State Virtualization, talks technical about the how to’s, tips, and things to think about when spinning up User State Virtualization in your environment.

For additional insight for IT pros, take a look at how Microsoft IT’s Intellimirror Service is delivered with User State Virtualization. For a quick refresher on Microsoft’s Desktop Virtualization strategy, including User State Virtualization, check out this short video.

In the coming weeks and months, I will continue to discuss trends in Desktop Virtualization, express Microsoft’s position and deliver guidance on how you can take advantage of Microsoft virtualization in your environment. So keep checking back here and feel free to post questions or suggested topics so I can address them in future posts.

A couple weeks ago, Windows 7 turned one year old with over 240 million licenses sold. Following that anniversary, Rich Reynolds shared related information about customer successes and industry trends that are changing traditional client computing; causing vendors and customers to rethink how they do business, deliver services and gain the most from their infrastructure to enable better business agility. Today, I’d like to lay out Microsoft’s position on the Desktop Virtualization trend and guide you through how you can incorporate it into your Windows strategy for the future.

To provide some context around this trend, Gartner’s EXP Worldwide Survey of nearly 1,600 CIOs shows Virtualization as the #1 technology priority in 2010. In addition, the Gartner User Survey Analysis: Desktop Virtualization Is Top PC Investment Priority for 2011 (M. Escherich, Oct. 2010) indicates that globally, 42% of respondents plan to begin investing in or continue investing in desktop virtualization before year-end 2011 where infrastructure consolidation (45%) and application management (38%) are two of the main projects that will be enabled through desktop virtualization. In addition, IDC’s recent Virtual Client Computing Survey demonstrates that at least 30% of respondents are using one or more desktop virtualization solutions in production today.

So, what exactly do I mean when I say Desktop Virtualization?

Years ago, we approached the desktop in a manner that required treating it as a single entity – we installed applications into our base image, we tested the sum of the parts together to ensure that one didn’t break the other, and eventually rolled out many large images in mass deployment. These were the best practices we had at that time and those approaches served us well.

Now, Desktop Virtualization allows flexibility to deliver, test and manage the “layers” individually ultimately enabling you to roll out Windows 7 faster and manage it more easily. Microsoft’s virtualization technologies are completely integrated with the new Windows 7 UI, System Center and Office 2010. Let’s take a closer look at what I mean by the “layers” of Desktop Virtualization below.

  • User state virtualization – separates the user’s data and settings from the physical device and replicates it centrally
  • Application virtualization- separates the application from the operating system to prevent application conflicts by never changing the original Windows installation, files or registry
  • OS virtualization –allows a single PC to run virtual machines side by side to address legacy application compatibility or to enable hosted virtual desktops in the datacenter

OK, but what are the benefits of using these new approaches? Let’s take them one at a time.

User state virtualization enables user mobility and fast recovery of data in the event a device is lost. Because the data is stored centrally and delivered on demand when the user logs in, they get their Windows experience immediately regardless of the location they log in. If they lose their primary device, IT delivers a “vanilla machine” without needing to copy any data. Microsoft offers roaming profiles and folder redirection to address user state virtualization.

Application virtualization enables IT to deliver applications much faster to their end users with fewer interruptions. With streaming, applications are delivered on demand when the user needs them, not when IT decides to push them. Application updates happen automatically on launch without the requirement of installation or rebooting. Overall, it reduces IT labor effort in all aspect of the application lifecycle to deliver higher-quality, more responsive services to the business. Microsoft offers App-V and RemoteApp for local & hosted virtual application delivery.

OS Virtualization offers benefits in two areas. When installed on a local PC it allows you to run two versions of Windows simultaneously on the same device to address legacy application compatibility issues. I described this in my MED-V 2.0 Beta post last month.

The second approach is to virtualize the operating system and host the desktop in the datacenter. The primary benefit is that hosted virtual desktops enable IT to keep critical data secured in the datacenter by preventing applications and data from being stored on the end point devices. This approach also enables flexible work scenarios such as hot-desking, work from home and can provide better business continuity and faster return to productivity for disaster recovery scenarios. Microsoft offers VDI Suites and Remote Desktop Services to address hosted desktop scenarios.

Now you may be thinking … How can I apply this to my desktop strategy now and in the near future with Windows 7?

We recommend that you start with User State and Application Virtualization first. Both of these layers can help you realize monetary and technology benefits across all approaches to desktop management. These virtualization technologies can be applied to physical or virtual desktops, running locally on a laptop or desktop; or as a virtual desktop hosted in the datacenter.

When thinking about the OS Virtualization layer ask yourself these basic questions…

  • “Is the application compatible with the new operating system?” If no – Use OS Virtualization.
  • If OS virtualization is appropriate, “Do I need to run the application locally or offline?” and “Do my desktops have enough space and memory to run two operating systems?” If yes – MED-V. If not enough local resources, then RDS and VDI become options.
  • “Do I need to secure corporate data and prevent it from going off premise?” If Yes – RDS or VDI.
  • “Do I want my user to have as close to a local experience as possible including personalization, high fidelity and security without delivering a desktop or laptop?” If yes – VDI.

A key point to remember is that hosted desktops in the datacenter always require network connectivity.

Customers who are already invested in Citrix technologies will be pleased to know that you can integrate Citrix XenDesktop and XenApp with all of Microsoft’s Desktop Virtualization offerings. This whitepaper details additional information on leveraging MDOP’s App-V and System Center with Citrix technologies. To get a sense for how customers are taking advantage of these technologies together, check out the University of Pittsburgh Medical Center and Telcom Italia case studies.

Although we didn’t discuss management in depth here, we will in future posts. If there is one thing you need to keep in mind, it’s that management is critical to your success. While some virtualization technologies will make management faster and easier, management is not displaced. Management is critical and if you have strong practices now, those disciplines can directly apply to virtualization as well. If your management is inconsistent, you will find it to be just as challenging when applying virtualization. Microsoft has simplified management of physical and virtual environments while ensuring that System Center can address both with minimal to no additional infrastructure investment.

Get it. Got it. Now you want more …. Where do you go?

David Trupkin, Sr. Product Manager for App-V/Med-V and Skand Mittal, Desktop Virtualization Product Manager are live at TechEd Europe in Berlin this week and have a great blog post over on Springboard for IT Pros where they are talking to MVPs, Partners and Microsoft Program Managers about where to get started as well as some exciting news about what’s coming in App-V 4.6 SP1! In addition, they had a chance to catch up with longtime partner Citrix, who gave a sneak peak on some new capabilities that really showcases the integration of XenDesktop with App-V, System Center, and RemoteFX.

For additional technical information, check out our newly launched Microsoft Desktop Virtualization Zone.

For cost savings and business case content, see the App-V TCO study, VDI TCO Study, and Forrester’s Total Economic Impact of App-V study and TEI companion worksheet for your environment. You can also take a look at the newly released Windows Optimized Desktop eBook which provides an overview of Windows 7 and Desktop Virtualization together in real world business scenarios.

Flat Screen TV Wall Mounts

Mounting a flat panel TV securely on a wall is one of the best ways of positioning the screen at the right viewing height and angle, while freeing up valuable room space. Traditional mounts have to be drilled and screwed into a stud or brick wall in order to hold the weight of the TV. But if you’re not a DIY fan, live in an apartment where attacking the wall with a power drill isn't an option, or just think you might change your mind later about where you want to watch TV, then this no-drill TV mount kit from Sanus might appeal.

The Foundations Basic Series comprises two three-shelf AV stands – the BFAV344 and BFAV550 – which can be used in combination with the Sanus new Foundations FMK056 Mount Kit to position the TV to the desired height without drilling into the wall or taking up additional shelf space. The mount kit attaches directly to the back of the AV stands with no drilling or installation required on the wall.

The FMK056 includes a tilting mount that provides ±12° of tilt and up to 30° of swivel to help you get the perfect viewing angle or dodge sunlight reflections at various times of the day.

The BFAV344 is available in high-gloss black lacquered finish, while the BFAV550 offers hardwood front veneers that come in a chestnut or chocolate finish. Both feature a curved shape, which allows the furniture to be positioned in the corner of a room or flat against a wall.

Hiding unsightly cables is often a problem with wall-mounted TVs, too. But both furniture units have cable management holes for keeping AV cables organized and out of sight.

The BFAV344 and BFAV550 units can support TVs up to 56 inches and have a top shelf weight capacity of 125 lbs (56 kg).

The Sanus ‘no drill’ FMK056 mount sells for US$199.99, the BFAV344 costs US$269.99, and the BFAV550 is US$229.99. All are available now through specialty AV suppliers.

The Right Ladder For The Right Job

There are as many different types of ladders as there are uses for them. I will cover the basic styles of extension ladders, step ladders, fixed steel ladders, rolling ladders, work platforms and some specialty ladders. From this article you will have a better idea of ladder options that will fit your specific needs.

Using Ladders – Do These Safety Checks

Accidents involving ladders can cause serious, even fatal, injuries. These often happen because the worker has not thought enough about how to use a ladder correctly.

Ladder Safety – Ladder Safety Tips to Keep Your Jobs Injury-Free

It might be bad luck to walk under a ladder, but for half a million people, they had bad luck once on the ladder. Of course this can all be avoided. Though the spring season is the time homeowners use ladders the most, decorating the house with Christmas lights during or before the holidays is also prime time to get climbing.

Ladders – A Universe of Choices

Ladders are made from many different types of materials. While wooden ladders are very common, so are ladders made from aluminium and fibreglass. There’s a type of ladder for virtually any type of household project in the UK.

Learning the Many Aspects of Ladders

Ladders are a necessity in every home and workplace. At home, you need a ladder to make routine upkeep of your house like cleaning the ceiling fans or hanging artifacts a smooth experience. In commercial setting, ladders are mostly used in construction or maintenance jobs.

Popularity of Halloween Costumes!

Ghosts. Goblins. Witches. Princesses. Action Adventurers. Vampires. Sports Icons. Celebrities. Historical Figures. Characters from children's literature. Hobos. What does each of these have in common? Halloween, of course!

Halloween certainly has an interesting history. Halloween's origins, including costumes of every kind imaginable, can be traced to ancient Celtic traditions. Want to learn more about the History of Halloween? Check out this Q&A on the History of Halloween through ages.

Q-Who started the Halloween celebration?

A-We don't know for sure. But, we do know that Halloween's origins can be traced to ancient Celtic traditions with the festival of Samhain. Indeed, it was the Celts who more than 2,000 years ago celebrated the beginning of their New Year on November 1st of each year.

Q-Why on earth would anyone celebrate the New Year in November?

A-Good question. New Year for the Celts meant the end of summer and harvest's bounty, and the beginning of a long, cold winter.

Q-Where do witches, ghosts and goblins come into it? Aren't these characters connected to Halloween tradition in some way?

A-Yes, indeed. They are. But, you have to go back to the Celt tradition. For the Celts, it was on the eve of October 31st when ghosts returned to the earth. You see, the Celts believed that the line between the living and dead became murky towards the end of one year and the beginning of the next. For the Celts, on the eve of October 31st, ghosts and other spirits could return to earth.

Q-Ghosts and spirits walking the earth? What's wrong with that?

A-A lot more than you think. You see, the Celts believed that these same ghosts and spirits who walked the earth at this time could cause a little trouble for them. They were particularly concerned about their fates, farms, crops and livelihoods. Who wouldn't be, right?

Q-Did the Druids have anything to do with Halloween history or tradition? Or, did they just worship trees?

A-Yes, the Druids played a role in Halloween history and tradition. At the time that ghosts were believed to walk the earth, the Druids would make predictions and foretell the future. These predictions were important to the Celts as the long winter months lay ahead and they began to wonder about their prospects. To mark Samhain, Druid priests would build large bonfires. Celtic people would gather around these fires, offering crops and animals in sacrifice to the many Celtic deities. Sometimes, the Celts would don masks and impersonate their ancestors. The Celts also wore costumes to confuse the spirits who walked the earth during this time. It's believed that they did this to ward off evil spirits and bad luck.

Q-How did the Romans feel about all this dancing, fortune telling and predictions? It must have been quite a surprise for them.

A-You're probably right. In time, the Romans overran the Celtic lands, and eventually Samhain became combined with equally colorful Roman traditions, especially the ones where the Romans honored their dead and celebrated harvest.

Q-When and how did Christianity leave its mark on Halloween tradition?

A-Indeed, Christianity left its mark on Celtic tradition. In the 7th century, Pope Boniface IV named November 1st All Saints Day, a time when Christians venerated the lives of Saints and Christian martyrs. The night before All Saints Day become known as All-Hallows Eve. Much later, the Catholic Church named November 2nd All Souls Day, one where Catholics would honor the dead. Similar to Celtic traditions long before, people celebrated the day with bonfires and parades, and also dressed in costume as saints, angels and, even, devils.

Q-Celts, Romans and Christians all made their mark on Halloween. But, how did it all come together into the Halloween tradition we know today?

A-Over a period of time, these three events, the eve of All Saints, All Saints Day, and All Souls Day, became known as Hallowmas.

Q-It seems like American Halloween really took off at one point. How did that happen?

A-Eventually, Europeans looked westward and journeyed to America, bringing their Halloween customs with them. But, as you can imagine, Puritanism in New England slowed the diffusion of the holidays and celebrations that were held were rather solemn affairs. Of course, a completely different dynamic emerged in the south and in Maryland, where Halloween celebrations assumed a more energetic or festive air.

Q-Did Native peoples leave their mark on Halloween, like the Romans and Christians before them in the Old World?

A-Good question. Yes, they did. Native American culture put its stamp on Halloween as the Romans and Christianity before them and, eventually, Halloween became a distinctly American custom.

Q-It seems like Halloween is celebrated a little differently across the United States. What's up with that?

A-The first Halloween celebrations in the New World were public events marking the harvest season, where neighbors would come together and share stories of the dead, tell fortunes, dance, play music and sing songs. Colonial Halloween featured ghost stories and mischief-making. In the 19th century, harvest celebrations were held in communities across the land, but not Halloween itself. Remember, the Puritans in New England were ware of the Halloween tradition which led to some resistance throughout the North over time.

Q-How did Halloween traditions change with the arrival of new immigrants to America?

A-The Irish immigrants who came to America in the mid to late 19th century probably did more to spread Halloween than anyone or anything else. Taking their cue from the newcomers, Americans began to dress up in costumes and go house-to-house seeking food or money, the beginning of what would become today's "trick-or-treat" tradition.

Q-Tell me: Why on earth do we "Bob for apples" at Halloween parties? Does this have anything to do with a guy named Bob or his apple orchard?

A-Not even close. Way back when, young women would engage in fortune telling, including trying to determine each other's future prospects of marriage. They also played tricks on each other with yarn, apple parings, and mirrors. Bobbing for apples probably evolved from this "trick" tradition.

Q-Is it my imagination or has Halloween become a much more family-friendly affair? How did this happen?

A-In the late 1800s, Halloween evolved into a holiday more about community and family fun than about ghosts, pranks, or witchcraft. In the beginning of the 20th century, Halloween parties for both children and adults became the preferred way of marking the day. Whether fun, games, food or festive costumes, kids were up to it and parents were relieved, under some pressure to make Halloween less spooky.

Q-It seems like Halloween today is more about the community coming together to have fun, rather than ritual or custom. When did that start?

A-By the 1920s and 1930s, Halloween had become secularized, with community-wide parades and parties. But, vandalism and trickery still plagued the events, causing community leaders great concern.

Q-What did communities to do keep the fun in and the trouble out of Halloween?

A-Parents and communities combined to make the holiday more about kids as a result of growing mischief and pranks. This approach was facilitated by the Baby Boom of the 1950s where schools and neighborhood teemed with kids looking for adventure and fun. Trick-or-treating and going from door-to-door grew in popularity as parents and families tried to discourage Halloween's dark side. However, some report that Mischief Night (the night before Halloween) is still a problem in their communities.

Q-Wow! There's more to Halloween history than I ever believed possible!

A-Yes, indeed. Halloween and Halloween history has changed and evolved over time, beginning with the ancient Celts and spreading to the United States where the Halloween tradition continues to flourish. In the new millennium, Halloween custom includes both kids and family, young and old. People dress up in costumes of every kind, "trick or treat" in neighborhoods and towns, attend Halloween parties, and celebrate in so many other ways.

Popularity of Halloween Costumes!

Before Finding Nemo, Monsters Inc., and the later accomplishments of Pixar Entertainment, the original Toy Story altered the landscape of children's animated film forever. This was the first movie created entirely through computer generation, and the style of this production caused an evolution in animated technology that altered the genre. For one, the computer graphics and sophisticated methods allowed for greater possibility. Secondly, what was once simple cartoon intended for kids audiences expanded to impress and delight older audiences as well.

If the original animated film created that much "Buzz" - Toy Story 2 did not disappoint, either. In 2007, Andy's lovable toys returned, ready to take on another super mission. Amidst the power struggles between stubborn Buzz Lightyear and practical Woody, audiences again fell in love with the talking toys. This beloved franchise has been everywhere a product can be placed. Ben linens, kitchenware, watches and accessories, clothing, toothbrushes, and, of course, Halloween costumes. This isn't even to mention the toys themselves. This industry is booming once again, as the long-anticipated Toy Story 3 reaches the big screen nationwide.

So, what are the earliest reviews of Toy Story 3 forecasting for this trilogy that has spanned generations? Well, the critical acclaim has already begun. Pixar has not disappointed, it seems, and has once again raised the bar for the animation standard by introducing IMAX 3D. Of course, it took James Cameron years upon years to complete the graphically brilliant Avatar. Pixar, however, has reestablished a pop culture classic by bringing this beloved franchise back in business. The expectations after the long wait have mounted among fans, especially those who have grown up since the original film's theatrical release. For this reason, this animated third installment will enjoy audiences of all ages and an unusually wide-ranging market.

The humor in the Pixar trilogy series also unites audiences of all age levels. The jokes and innuendo capture the attention of children and adults. In Toy Story 3, the addition of new characters also brings additional flair and fun to the original concept.

So, fifteen years after the release of the original Toy Story, the animated adventure continues. In Toy Story 3, everyone's favorite cowboy and space cadet action figure are facing a brand new dilemma: little Andy has grown up! As Andy heads to college, his beloved toys find themselves once again displaced from home and unhappily relocated - this time to a disorderly daycare. Now, the toys have to work together to once more escape from the chaos of this far-away place.

Differences aside, Woody and Buzz were able to pull it off in Toy Story 1 and 2. Will they be able to make their great escape "to infinity and beyond" with their friends Barbie, Mr. Pricklepants, and Lots-o'-Huggin Bear? Directed by Lee Unkrich, Tom Hanks and Tim Allen reprise their roles as Woody and Buzz Lightyear, two of the most lovable sidekicks in animated film.

If Toy Story costumes were a smash-hit in the past, Toy Story 3 Halloween costumes are going to be all the rage as the 2010 Mega Trend. When you know how influential the original film was, then you recognize how huge it is that the long-anticipated series conclusion has finally been released. This should be no great shocker, considering alone the 632,936 fans of the Facebook page "Move out of the way children I've been waiting 11 years to see Toy Story 3." When you appreciate the ongoing legacy, popularity, and nostalgia of the Toy Story series, Halloween costume shopping will be a breeze!

For Halloween, you don't just have your choice among Woody and Buzz Lightyear costumes and outfits. You have an entire ensemble and supporting cast to bring extra fun, creativity, or even group-themed costume wear to your Halloween plans. The expansion of the franchise has impacted this market, bringing the green army man and cute space alien to costume life for guys, girls, kids, and toddlers. Children's Toy Story costumes can be paired up with women's and men's - a new and exciting addition to the 2010 selection of options.

Expect one of this year's top sellers to be Toy Story 3's new leading lady Jessie. Jessie Halloween Costumes bring a new avenue for girls and women to participate in this once male-dominated terrain. The Toy Story Jessie costume offers a new element to the traditional Toy Story 1 and 2 Costumes.

You can find the Toy Story costumes you're looking for at www.fantasytoyland.com/toy-story-costumes.html. So, the bottom line is simple. As the third and final installment of the series looks pretty good, the Toy Story Line of Halloween Costumes will be looking even better as a top-selling theme for Halloween 2010.

Bathroom Weight Scales

Depending on how you feel about your weight, using the scale could be a satisfying or depressing prospect. Many fall into the latter category, including myself. When I know I'm packing on the pounds, I do what we all do and avoid the scale altogether. However, it's another story when I'm on a health kick. Grey skies clear up and I jump on that sucker as often as possible. It's amazing that a lousy scale should motivate me in this way, but chronicling weight loss really melts my Smart Balance Butter. It validates my commitment and achievement.

I suppose I'm a bit of a freak for admitting that previous sentence, but seriously people, don't hate because I'm skinny. Hate because I have the Tanita UltimateScale 2001, a digital weight measuring device that also purports to measure body fat to provide an overall picture of health and fitness for its user.

The UtlimateScale operates on 4 AA batteries and sports a hard, plastic shell with metallic electrodes on which the ball and heel of the feet rest. Because weight is registered digitally, there's a start switch located on the bottom right hand corner of the measuring platform and it's powered on by a press of the toe. Place your bare feet on the electrodes and wait a few seconds as the scale displays your weight in half pound increments. The scale shuts down automatically after the measuring process is complete. The scale can also switch modes to read kilograms as well as st-lb.

To get accurate readings, the instruction manual recommends that weight measuring be conducted at the same time of day over a period of time, and usually about three hours after rising, eating or hard exercise. In preparation for this review, I have weighed myself at 9:30pm every other evening for the past 10 days. With the new exercise and diet regimen I've recently adopted, the readings were consistent and it reflected the gradual weight loss I've been undergoing (2 lbs in the past ten days).

The scale can also read body fat percentage via BIA (Bioelectrical Impedance Analysis) method. After entering some personal data into the scale, a safe, low-level electrical current is passed through the body to determine a percentage value. I suppose it's a great health and fitness tool, but I honestly never use it. Even the instruction manual warns that body fat percentage fluctuates throughout the day, and an accurate reading is usually hampered by the body's hydration levels. For me, I regard it strictly as a window dressing feature.

The real reason why I recommend this scale is because the 2001 model has been on the market for quite some time and as such, the price has dropped dramatically. After many years marked by alternating periods of frequent use and hibernation, the scale has consistently performed its sole duty of gauging my weight.

What is K9 Advantix For Dogs?

It is getting to be summer time, and the warm air may be inspiring many to get packed and head out camping. Some will be taking friends, family or their beloved pets along with them. You always want to make sure that you are safe and that anyone tagging along is too. When you're packing needed supplies for the trip, don't forget to take things that your dog will need also. There are many different types of mosquitoes, fleas, biting flies and ticks that will target humans and animals alike. These insects carry various diseases that can cause illness and possibly even death. In America, mosquitoes can transmit St. Louis encephalitis (an inflammation of the brain) and West Nile virus. If one is bitten by a fly, a very painful, swollen sore will follow which can become infected and spread. One can get Lyme disease, Rocky Mountain spotted fever and Ehrlichiosis from ticks.

Dogs, just like us, aren't immune to the diseases that are carried through insect bites, so you will want to use a repellent on them and yourself. There are many precautions you must take when using insect repellents, as they contain chemicals that can be dangerous. Human insect repellents are not approved to use on dogs, cats, or other domestic animals. There are, however, repellents that are made to use just for them. The best way to protect yourself from bites is to attempt using non chemical deterrents, such as using barriers like windows and nets. Wearing long pants, long sleeved shirts, and socks may also prove effective. If this isn't an option, then choose an insect repellent with caution and always read the labels. This will serve as a guide to safety as to proper handling and application. Those which do not bear an EPA registration number have not been evaluated, so it is best to choose repellents that have.

Now, as far as what to do about keeping your dog from being bitten by insects, you do have different choices. Different pet stores have insect repellents that are made just for dogs and other domesticated animals. Petco for example, sells Farnam Insect Lotion for dogs for around $10.00 that you spray onto them that protects from flies, gnats, and mosquitoes. Bio Spot On is recommended to fight against fleas, ticks, and mosquitos. Some people also rather go natural and use herbal insect concoctions. Some claim that citrus with water is harmless to dogs and will keep bugs away from you and your pet. It is very important to inhibit mosquito bites so that they will not transmit heart worms to your dog. It is not recommended that you use any product containing DEET on a dog or cat, because this chemical is known to cause neurological problems following application.

If you are already using Frontline or K9 Advantix on your pet, then you should know that these already contain mosquito repellent. Try to use an insect inhibitor that is pet friendly on yourself as well since licking your skin when it has a poisonous substance coating it could make the dog sick or worse. You don't want fleas infesting your pet, for they cause a whole host of problems. Your dog can get tapeworms, become anemic, have skin irritations, allergic reactions, or can die. Apple cider vinegar used to rinse your pet in is known to keep fleas at bay. Homemade bug repellents containing lemon oil, rosemary oil, lavender, peppermint, and geranium essential oils have been shown to dispel bugs. Many pet owners sing the praises of using Avon Skin-So-Soft on themselves, children, and their dogs or cats.

At the University of Illinois in 2002, the first confirmed case of death of a canine due to infection from the West Nile Virus was documented. Fever, lethargy, or any other odd behavior of your pet is indicative of this virus and should be immediately followed with an emergency visit to your pet's regular veterinarian. There have been no indications that animals that have been infected can then give it to a human, and full recovery from this virus is likely when caught early and dealt with in a timely manner by a professional. Regardless of what type of insect repellent you decide to use, always take precautions. Read all of your labels to see what ingredients are in the products you will be using. Ask your doctor and your pet's veterinarian before using anything and for recommendations on things that are safe for you both. Prevention is key when dealing with insect bites. Using collars, sprays, lotions, and oils so that infestation doesn't occur may save your dog's good health or life. Pets are just like any other member of a family and should be taken care of to give them many more healthy years to come.

Chris Poe, JibJab's engineering director, wrote a short guest post on the Official Google Enterprise Blog this afternoon to explain the development.  The overarching reason was simple: "This, hopefully, will allow our visitors to find more of what they're looking for on our site - good laughs!"

As for some more specific details, Poe wrote, "e chose Google Site Search for its ability to help users find the perfect eCard or video, fast, while allowing our developers to control the look and feel of the results.  We also appreciated the fact that Google Site Search provided XML results for full customization of each search query, and gave us a hands-free search solution that requires little-to-no custom maintenance."

The Google/JibJab combo sounds like a win for JibJab, then, and the timing of this move is also hard to fault.  Halloween, Thanksgiving, and Christmas aren't too far off, after all, and JibJab is almost sure to release more viral videos to celebrate.

Unfortunately, neither Google nor JibJab disclosed any financial particulars or got into traffic expectations.

Still, the development should be at least be a symbolic win for Google given JibJab's high profile.

Starcraft Review

I admit it; I'm an addicted PC gamer, so when Blizzard offered me the chance to beta test Star Craft II: Wings of Liberty, I delved in with both feet. I've long been a fan of Blizzards games. I started out playing Diablo many years ago and had moved into the wonderful realm of World of WarCraft when Blizzard contacted me to help beta test Star Craft II.

Not only does Star Craft II grab a hold with a variety of play, including multifaceted campaigns and a highly competitive multi-player bent, Blizzard has once again outdone themselves with the reinvention of the game as well as expounding on the successes found in Star Craft.

Star Craft II, like its predecessor, is a strategic real-time Sci-Fi game, offering both a single play mode and a multi-player mode. In single player mode, the story picks up where Star Craft: Brood War leaves off allowing one to continue the adventure. You can also choose to play custom games against the computer to practice your strategy. In multi-player mode, Battle.net (Blizzards online gaming portal) drops you into leagues and ladders, an advanced automated matchmaking system. You are placed in game against players near your skill level, so as to make your gaming experience fair.

While Blizzard has priced Star Craft II: Wings of Liberty a bit higher ($59.99) than what you would expect to pay for a PC game, the superb cinematic's, variety of game play, and just plain fun factor make the extra money worth spending.

I like bacon. I know, courageous stance right? Bacon is one of the delights of life on this earth. It’s a universal good, a boon; manna.

But like any universal good on this earth, there are those who disapprove. PETA, for example, and for obvious reasons. Luckily, I don’t see PETA successfully instituting global bacon sharia anytime soon. On the other hand, they may not have to. Just as there are universally good things in this world, there are universally stupid things. I call them progressives.

And guess what they’re coming for next? Your kids.

Have you read Jonah Goldberg’s Liberal Fascism? If not … why are you so communist? The smiley face with the Hitler mustache on the front cover is a reference to material in the book. The idea being that where fascism intersects with American life, it does so under the guise of do-goodery. It’s nice. Smiley-face fascism. (Not be confused with the smiley on the cover of Kos’ new book, which is a reference to nu-uh-ery.) So maybe we call the war on food “smiley-face eugenics”. Too far? Well let’s see.

So-called progressives, or liberals as they’re known in the wild, want to help you, you see. You being the poor, dumb, fat, probably racist, Ugly American™ that you are. It takes a village to fix what ails you, and why? Because you don’t know best. They know best.

Wear your seat belt! Put on that helmet! Don’t drink that, drink this. Don’t smoke! You’ll poke your eye with that thing! That is not appropriate behavior for two consentin … ha ha, just kidding. Bedroom is off-limits. But you know what’s not off-limits to the nannies? Happy Meals. Yep. That ancient cardboard (save the whales!) scourge has finally met its match in the form of city councils and “concerned” citizens groups. At issue? The toys.

Yes, kids. Democrats want to take away your toys. Hey, you don’t vote. So suck it.

As reported in the Christian Science Monitor, San Francisco is considering doing away with the Happy Meal. San Fran, or Moscow as its known in the wild, wants to help you, you see. To not be fat. In fact that may be their new city motto: Don’t Be Fat. Not quite as catchy as “Gold in Peace, Iron in War” but … war is bad? Mmmkay?

This wouldn’t be the first such action in California. Santa Clara, California recently banned restaurants in unincorporated areas from offering toys with meals that have some amount of calories they arbitrarily assessed as EEVVIIILLLLLL. I guess if you’re in an incorporated area you’re less prone to being lured. Did I mention the luring?

Yes, if you read the news reports the word comes up quite a bit. McDonald’s is “luring” children to unhealthiness with the siren song of Shrek watches and grease. A potent lure indeed (I caught a ten pound bass with the very thing). The source of the creepy imagery of a trench coat-bedecked Ronald McDonald enticing innocent children into his unmarked van, there to ply them with McNuggets and bendy straws seems to be this statement put out by citizen “watchdog” group the Center for Science in the Public Interest (CSPI) back in July, as reported by MichelleMalkin.com at the time. Relevant quotable:

“… using toys to lure small children into McDonald’s is unfair and deceptive marketing and is illegal under various state consumer protection laws.”

Lure. Nice. Now, perhaps you think I’m reading too much into that. Surely they don’t mean to compare McDonald’s to Chester the Molester with that word. Right? From the same statement:

“McDonald’s is the stranger in the playground handing out candy to children,” said CSPI litigation director Stephen Gardner. “McDonald’s use of toys undercuts parental authority and exploits young children’s developmental immaturity—all this to induce children to prefer foods that may harm their health. It’s a creepy and predatory practice that warrants an injunction.”

Got that? Creepy. Predatory. Stranger in the playground.

Artist’s rendering. If you see this man, seek shelter and celery. LOCALLY GROWN celery.

Also instructive is the assertion that McD’s is undermining parental authority. Note the subtle abdication of that very authority, and all personal responsibility, just by that remark. Kids are fat because toys lure them, and parents are powerless. Since you, you weak fat Americans, are too weak and fat to decide what to feed your kids, we will do it for you. Since you can’t say no on a case by case basis, we’ll just take away the option.

Taking away options, in the end, is what progressives are the very best at. Because some children are obese, and because some parents give them too many McNugget meals, well we’ll just take away the option. Problem solved! … Or is it?

Toys as a prize are certainly a value-add to any meal. Even steak. (Trust me.) But which parent among you thinks your kids would stop wanting chicken nuggets just because the latest “Eat Pray Love.” bauble isn’t included? Anyone? And when those toys are gone, are the “never say no” parents suddenly going to be empowered, the spell of plastic toys in plastic bags finally broken and their will to govern the health of their children finally set free?

Please.

They want your salt. They want your bacon. They want your toys. And soon enough, they will want the nuggets, too. McDonald’s CEO Skinner fired back at CSPI in July. And yet here we are again, potentially facing a fresh ban in San Francisco. Where next?

Where will this societal engineering end? There’s no obvious final line to cross in this way of thinking. Which bendy straw will break the camel’s back? How far, ultimately, is too far for legislating healthiness? Why not get rid of Ronald? Kids like clowns right? Well .. some do. What about breakfast cereal? How long until Frankenberry sits in chains? Until the Trix rabbit is put to sleep? Are these not enticing to children?

Come to think of it .. what about bright colors? Contests? Giveaways? Scrap all that too. Hell, even the name. HAPPY Meal? So you’re telling kids they might be happy? OUTRAGE!!

Here’s a preview of the Happy Meal to come:

Michelle Obama has declared a war on fat. Because fat kids, you see, are a threat to national security. New York continues the assault on salt, as does the FDA. The race to “perfect” is underway. Because the fatcat … err, thincats in Washington and in your city offices, well they just know better than you. It may take a village to raise a child, but it takes an army of bureaucrats to raise a THIN child. So say the progressives.

What say you? Me? I say, those would sacrifice liberty to wear a size three deserve neither and will lose um … growth.

But now I’ve gotta run. I’m having bacon for dinner. And maybe a side of BUTT THE HELL OUT OF MY LIFE.

Cuisinart Elite Collection Food Processor

This guide is for prospective operators of food enterprises (food establishments, retail food stores, food warehouses, and food processors) desiring to open a food business in either their local city, county or state jurisdiction. This is a general overview and may not be all inclusive of the codes and ordinances in your locality. It is good to note that though this document will more than likely cover most if not all requirements for starting a food business in your jurisdiction, it would be in your best interest to familiarize yourself with the codes and regulations of your local city, county and/or state.

Operating Permits - Food Enterprises

A Food Establishment application can be obtained at your local city or county health department. If you plan to manufacture foods and package for retail sale you may be required to obtain a food manufacturer's license from your state regulatory agency. If you plan to distribute your product outside of your state lines a federal license may also have to be obtained. It is recommended that you submit a fully completed application and fees at least one month prior to your anticipated opening date. This gives the local authority the needed lead time to process it and schedule any needed pre-opening inspections. Again, make sure that you provide ALL information required on the application. Incomplete applications may delay your approval.

Food permits are generally in effect for one year from the date of issue and are renewable each year thereafter when the appropriate fee is paid and as long as the establishment remains in compliance with applicable Health codes and regulations.

Home preparation of food for public consumption is prohibited. All food that is to be consumed by the public, whether free or for purchase must be prepared at a permitted establishment that is inspected by a federal, state, or local Health Authority.

Food Establishment Fee: Food establishment fees are variable depending on jurisdiction. Contact your local health authority to inquire about permitting fees.

NOTE: Larger establishments that have multiple food service operations on site may need to obtain a health permit for each operation. A separate application and fees may need to be submitted for each operation.

Food Enterprise Pre-Opening Processes

When starting a Food Enterprise business you may be required to go through either or both A) a change of ownership inspection or B) a plan review process. Read through options A & B below to determine which best fits your situation. Contact your local health authority if you need help in making that determination.

A) Change of Ownership Inspection Process-

Before opening for business you may be required to go through a change of ownership inspection. This inspection verifies your establishment complies with current regulations and that clearance to occupy the site has been granted by your city or county. This inspection may incur a fee and the fee for this inspection will more than likely be required to be paid before the inspector conducts the inspection. If applicable, a request for a Change of Ownership application should be available at the offices of your local city or county health authority. Again, to expedite your request, a fully completed application must be submitted. After submitting the application; call to schedule the inspection with your inspector. If the establishment doesn't comply with current regulations you will be required to bring it up to code before your operating permit is approved. Prospective business owners, if available, it would be in your best interest to request a change of ownership inspection before finalizing the sale. This gives the prospective business owner a heads up on any items that may be required for the establishment to be in compliance with local city or county codes. Under no circumstances may you begin operations without approval from the local city or county health authority. Legal charges may be filed against you if you do.

B) Food Establishment Plan Review Process

A plan review will more than likely be required for any newly built business or in the event of an extensive remodel of an existing business. NOTE: This will also more than likely require a completed application and fees be paid in order to initiate this process.

A Plan Review is required whenever a building is constructed or substantially remodeled to be a food enterprise, whenever a substantial change is made to an existing food facility or may be required if a plumbing permit, building permit, or other construction permit is required by the local city or county development offices.

The Plan Review Application, including proposed menu, Fees, and 1 or more sets of building plans all may be required to be submitted as a package. Review all forms thoroughly to ensure accuracy of information provided. Incomplete or inaccurate applications could delay your plan review. The Plan Review Application should be available at the offices of your local city or county Health Authority. Upon approval, the plans are stamped by the Health Authority and the person submitting the plans will be called to pick them up.

Submit building plans after the type of food operation and menu has been determined and after receiving Building approval from your local city or county development offices. The building plans should be drawn to scale with most plans drawn in a scale of ¼" = 1Ft. and detail the layout of the kitchen, dining area, restrooms, storage areas, break room, wait stations and bar. The plans are to include a materials list of specifications for all floors, walls, and ceilings.

Certificate of Occupancy

All Food Enterprises will more than likely be required to have a Certificate of Occupancy (CO). A CO is issued after the Building and Health Officials inspect the building and find no violations of the Building or Health Codes during new construction and/or a remodel. The CO will also state the use for which the building will be used. The CO Inspection is usually required prior to getting final health approval but in some cases not only may a preliminary CO inspection be required prior to receiving your final health approval but a secondary (final) CO inspection may be required by your building inspector before your Operating Permit is approved. Inquire with your local health authority and building inspectors to see what process is required. NOTE: Contact the building inspectors at least 7 days prior to the time you are ready to schedule your inspection. This should insure that you get a timely response.

Permit Approval

Once you have completed the pre-opening processes and your Building and Health Inspectors have approved your operating permit, you may open for business. Under no circumstances may you begin operations without approval from both the Building and Health Inspectors. Legal charges may be filed against you if you do.

Other Approvals

Building Permits: Plans may need to be submitted for a Commercial Plan Review. If required, contact your local Building or Development Services Office to schedule this review and to obtain a building permit.

Industrial Waste: If you are taking over a previous business and changing the type of operation, ensure the grease trap meets the requirements for your new operation. For example, when a "sandwich shop" becomes a "fried chicken" location, the existing grease trap may need to be modified. Contact your local industrial waste inspector to ascertain if any changes need to be made to the existing system or to evaluate your engineered designs if your plans require the installation of an on-site septic system.

Fire Inspections: Building Inspectors are concerned with grease-laden vapors and proper hood protection in food facilities. All cooking equipment must be installed under an approved hood system. In addition, establishments in excess of 5,000 sq. ft. are required to provide a sprinkler system. Establishments with an occupancy load in excess of 50 people are required to provide fire alarms. Call your local building inspector, fire inspector or fire marshal to evaluate plans or to schedule a site inspection.

Health Code Plan Notes

1) Refrigeration All refrigerated units are to hold foods at or below 41°F.

2) Restrooms (two are normally required). If the establishment has only carry-out or seating for less than 20 people, and less than 10 employees, then only one employee restroom may be allowed. Two restrooms may be required if alcohol is served on the premises or more than 20 seats are provided. Each restroom must have a hand sink with hot (at least 100°F) and cold water, mechanical air ventilation to the outside, and a solid, self-closing door. Restrooms may not open directly into a kitchen. The total number of restrooms for a Childcare facility is dependent on the "minimum standards" of the Texas. Dept. of Family and Protective Services (834-3195) as it relates to Childcare.

3) Sinks

A. Service Sink/Mop Sink/Curbed Floor sink: At least one of these must be available for mop washing and disposal of mop water in an approved waste water disposal system. A drying rack is required for mops to air dry. This sink must be provided with a backflow preventer on any threaded hose bib to protect the water supply. Note: the mop sink may be located in a different area of the building than the kitchen.

B. Hand washing sinks: Shall be located to allow convenient use by employees in food preparation, food dispensing, ware wash areas, and any wait station where ice is dispensed, bar area or in a walk-in where meat is cut or trimmed. At least one hand sink will be required; additional, separate hand sinks may also be required. Small kitchens with food prep and ware washing in close proximity may be allowed to use one hand sink to serve both activities. Other hand sinks must be associated with restrooms. Provide at least 12" tall splashguards if a hand sink is located near food prep, open food, ice, or clean food contact surfaces. Otherwise, the hand sink must have at least 18" lateral separation from these. A sign or poster that notifies food employees to wash their hands shall be provided to all hand washing sinks and be clearly visible. A small, swinging door (as in a bar area) could separate a hand sink from a work area, otherwise no doors separating hand sink from work areas.

Each sink must be supplied with hot (100°F) and cold water, soap and disposable towels. Childcare facilities must have hot water in the diaper changing area and kitchen. If plans do not provide sufficient hand sinks to meet the requirements of the establishment you will be asked to provide a revised plan with additional hand sinks.

C. Ware Wash Area: A commercial dishwasher or 3 compartment sink is required in most cases. Dish machines must be able to effectively sanitize all equipment and utensils. They must dispense a chemical sanitizer or provide a final rinse of at least 180° F. (single, stationary rack machines are required to reach 165° in the sanitize cycle). Test strips are required. Above-the-counter dish machines are required to have Type II vent-hood.

Ware washing sinks shall be of sufficient size to immerse the largest piece of equipment. Cold and hot (100°F minimum) water under pressure delivered through a mixing valve shall be provided. Provide at least 2 integral drain boards or 1 integral drain board and a mobile dish cart. Drying racks or shelves will aid in adequately air drying all wares. Facilities with very limited ware washing and using disposable containers may request a variance to install a 2 compartment sink (example: convenience store). These sinks are required to have a drain board. The sinks must have an indirect connection to the sanitary sewer (at least a one inch air gap). This includes all food prep sinks and ware wash sinks.

4)Ceiling Construction: Ceilings over open food, ice, soda fountains, ware washing, restrooms and bars must meet construction criteria and be smooth, durable, nonabsorbent, and cleanable. Open rafters, trusses or grid work and exposed duct work, pipes or utility lines are usually prohibited with no open structure permitted. If drop down acoustic tiles are used, they must be properly constructed. These tiles are washable and have a smooth surface without pinholes. Painted dry wall or boards are generally acceptable.

5)Walls/Floors: Must be constructed of approved materials. Cleanable water-based enamel paint is usually acceptable for most wall surfaces. Areas that are subject to regular cleaning and splash may be covered with FRP, stainless, or galvanized metal. Floor/wall junctures shall provide no greater than 1/32" gap. Baseboards are required. Caulk wall/floor junctures to prevent the collection of food particles and water. Masonry (brick/concrete) wall/floor junctures DO NOT require baseboards since a masonry juncture provides no gap. Raw brick and concrete in the kitchen area requires sealing. The sand grout of all tiles needs to be sealed. Epoxy grout does not require sealing. VCT floor tiles require a coat of wax to seal out liquids.

6)Solid Waste: Dumpster and grease barrels shall rest on a machine laid asphalt or concrete pad. These containers must have tight fitting lids and drain plugs in place.

7)Outdoor Cooking facilities: Barbeque pits or smokers shall be enclosed, and if screened in, at least a 1/16" mesh screen is required. They shall rest on a concrete or asphalt pad. The meat may only be placed on the smoker; no food prep allowed in this enclosure. Any seasoning, cutting, etc. must take place inside the establishment. Outdoor bars and wait stations will be approved on a case by case basis by your local health authority.

8)Water and Sewage Systems: All private onsite sewage facilities and wells serving a new food enterprise, an extensively remodeled food enterprise, or a food enterprise coming under new ownership must meet current standards. These systems are required to be evaluated with respect to whether the system (a) meets current standards and (b) is adequate for the proposed use.

NOTE: A food service facility or Childcare facility using a well may be considered public water supply and subject to specific restrictions and regulations. Consult your local health authority to inquire about any questions regarding the use of a private well.

9)Protecting the Water Supply: Threaded hose bibs are required to have a backflow prevention device attached. Spray hoses and fill hoses shall hang at least 1 inch above the maximum flood rim of a basin or the hoses shall be provided with an atmospheric vacuum breaker or backflow prevention device.

10)Indirect Connections: Jockey boxes, ice bins, ice machines and sinks (as identified above in # 3) must be provided with indirect connections to the sewer. Floor sinks are required on new construction.

11)Lighting: Adequate amount of light shall be provided to all areas. At least 20 foot candles is required where food is provided for customer self-service such as buffet and salad bars or where fresh produce or packaged foods are sold. At least 50 food candles is required at surfaces where employees are working with food using utensils or knives, slicers, grinders, saws, or where employee safety is a factor.

12)Outer Openings: All windows, vents and exterior doors shall be tight fitting. If needed, use weather stripping to provide a tight fit. All exterior doors shall have a self-closure. Screens on windows and doors shall be at least 1/16" mesh. Roll up doors to be screened or the proposed food service area provided with physical doors to create a separate walled room. Exhaust fans must be screened, or if they are louvered, must automatically close when the fan is disengaged.

13)Food Contact Surfaces: Stainless steel, Formica, polished marble, Corian, machined stone, approved ceramics or plastics may be used for food contact surfaces.

14)Counters: All raw wood must be painted in areas that come in contact with food, liquid or food containers of any kind. Included is the underside of the bar above the ware wash and/or hand sink (and the splash area).

15)Toxic Materials: Specify an area where chemicals are to be stored. A well-labeled, separate shelf or cabinet is best.

Food Manager Certification: The health codes of your State, County or City may require that one or more food managers of a permitted Food Enterprise to obtain a Food Manager Certificate. A Food Manager Certificate is recognition that a person has received training in food sanitation. Inquire with your local health authority to see if food manager certification is required and the necessary steps required to obtain proper certification.
